Is it just me or does it seem like the 7800GTX's "true power" isnt unleashed until you run them in SLI mode?

There is a grammar error in the end of page 3:
" ...but the GeForce 7800 Ultra is always ahead of the GeForce 6800 Ultra."

I think you ment 7800 GTX, not Ultra :-)

30 fps is playable, anything above is pure goodness. I have an x800xl and it's great, but not a world beater like the 7800gtx.

Regardless of the game however, past 30-35 fps the difference is bragging rights, not really how it looks.
