On the Intel side, you've just about always been able to use their chipsets in SMP or UP mode. For a recent-ish example, the NCCH-DL uses the 875P chipset, which was also widely used on UP boards. On the AMD side, dual K7's required a different chipset than normal (the 762MP or MPX) as the point-to-point architecture required a northbridge with two FSBs. Dual K8's do not require any special chipset logic as the northbridge is inside the CPU die. All that is required are traces linking up the HT links of the processors.
